At pH 9.0 and under the condition of 90 ℃, the amount of enzyme is taken as one unit, which is required to degrade and release 1μmol reducing sugar (calculated as mannose) from the solution of Mannan with a concentration of 3 mg/m LBG per minute (locust bean powder, Sigma: G0753) .
