Definition of acid protease activity: The amount of enzyme is taken as one enzyme activity unit, which is that 1μg Tyrosine is produced by 1g Solid enzyme powder or 1ml Liquid enzyme hydrolyzing casein in a minute, at pH 3.0 and under the condition of 40 ℃.
Definition of neutral protease activity: The amount of enzyme is taken as one enzyme activity unit, which is that 1μg Tyrosine is produced by 1g Solid enzyme powder or 1ml Liquid enzyme hydrolyzing casein in a minute, at pH 7.5 and under the condition of 40 ℃.
